What is Nitrate?
A nitrogen compound that reaches water from fertilizer runoff and occurs naturally in vegetables like beets, spinach and celery. Vegetable nitrate behaves differently from water nitrate — in whole foods it comes packaged with antioxidants and is linked to cardiovascular benefits.
The regulatory concern is drinking water for infants, where high nitrate interferes with oxygen transport (methemoglobinemia).
