Raw (unpasteurized) cheddar aged 60+ days from 100% grass-fed cows producing only A2 beta-casein protein. Raw aged cheese retains heat-sensitive enzymes and beneficial bacteria, grass-fed dairy has a more favorable omega-3 to omega-6 ratio plus higher CLA and fat-soluble vitamins (A, K2), and A2/A2 milk is often better tolerated than standard A1 dairy. Organic certification rules out synthetic hormones, routine antibiotics, and GMO feed.
