Flour 'improver' present in the bleached wheat flour. Classified by IARC as Group 2B (possibly carcinogenic to humans) and listed on California Proposition 65 as a known carcinogen. BANNED in the European Union, United Kingdom, Canada, Brazil, China, India, Argentina, Peru, Nigeria, and Sri Lanka — but still legal in the US. The FDA has urged voluntary removal since 1991 but never banned it. Bromate residue can persist in the finished crust if baking is incomplete.

Refined white flour bleached with chlorine dioxide or benzoyl peroxide. Stripped of bran and germ; rapid glycemic spike. Synthetic vitamins are added back to mask the removal.
